1 10 ounce can diced tomato in juice

1 large Spanish onion

1 ounce kosher salt

.25 ounce course ground black pepper

1.5 cup apple cider vinegar

1.5 cup extra fine granulated cane sugar

.25 TBS crushed red pepper

Drain juice from tomatoes

Skin and dice onion

Add tomatoes and onions to skillet and sauté for additional 5 minutes

Add vinegar to deglaze

Scrape bottom of skillet

Add remaining ingredients and let simmer over low heat for 40 minutes
