Vodka Cream Pasta

  • Olive Oil
  • Butter
  • 1 onion minced
  • 1 shallot minced
  • 1 cup vodka
  • 1 cup chicken stock
  • 1 (28oz) caned crushed tomatoes
  • 2 tablespoons tomato paste
  • 1 pound fettuccine pasta
  • ½ cup heavy cream
  • Basil

Heat a sauté pan with a little olive oil and butter. Add onion and shallot and cook for a few minutes until translucent, stirring occasionally. Add vodka to the pan and let reduce by half, about 2-3 minutes. Stir in chicken stock, tomatoes and paste, cover and simmer for about 8-10 minutes. Season with salt and pepper. While sauce is simmering, bring a pot of water to a boil. Add pasta and cook until al dente. Drain pasta and put with sauce and stir until mixed well. Plate up pasta and sprinkle with chopped basil.
