RECIPES: Spice Rubbed Grilled Sirloin

Spice Rubbed Grilled Sirloin w/ pepperoni, grilled pineapple, chimichurri, fried potato straws

  • 4 10 ounce Sirloins
  • 6 ounces of diced pepperoni
  • Half a grilled pineapple
  • 1/4 C Italian parsley leaves
  • 1/4 C Arugula
  • 1/4 C chimichurri
  • 2 large Idaho Potatoes cut on a spiral cutter

Spice Rub

  • 1 T Smoked Paparika
  • 1/2 T coriander
  • 1/4 T cumin
  • 1 T dehydrated tomato blended into a powder
  • 1 T Kosher Salt
  • 1 T Black Pepper

Season steaks with rub and let rest at room temperature for 20-30 minutes.  Cut pineapple and oil down grill.  Season the pineapple with a little salt and sugar to get a good caramelization.  Sautée the pepperoni in a little oil to start to rendering.  Add the pre-grilled pineapple and toss.  Combine with greens in a separate bowl and taste for salt and pepper.  Grill the rubbed steaks to temperature and let rest.  Fry the potatoes and let them drain.  Assemble plate and serve with a side of chimichurri.
