RECIPES: Last night’s LO’s sandwich

INGREDIENTS

  • Cooked, pork tenderloin from last night’s dinner
  • Pineapple slice(s)
  • Baby kale
  • Whole grain English muffin or Hawaiian bun
  • Spicy or honey mustard

DIRECTIONS

  1. Spread muffin or bun with mustard as desired.
  2. Add a bunch of baby kale, then a slice of pineapple and several slices of cooked pork.
  3. Enjoy. Makes 1 sandwich.
