RECIPES: Spicy Buffalo Chicken Deviled Eggs

12 large eggs, hard-cooked, cooled and peeled

½ cup buffalo hot wings sauce

2-3 tablespoons plain Greek yogurt or light sour cream

¼ cup very finely chopped celery

2 tablespoons very finely chopped orange bell pepper

2 tablespoons very finely chopped sweet onion

¼ – 1/3 cup blue cheese crumbles (plus more for garnish if desired)

¾ cup finely diced cooked chicken breast

Garnishes: blue cheese crumbles, Italian parsley, chives, drizzles of hot wings sauce

 

Cut cooked eggs in half. Remove egg yolks and place in medium bowl. Add buffalo sauce and yogurt/sour cream, stirring until blended. Add celery, bell peppers, onion, blue cheese and chicken. Stir until thoroughly combined. Spoon or pipe mixture into egg whites. Refrigerate in tightly covered container until serving time, then garnish as desired. Makes 24 deviled egg halves.
