RECIPES: Green Pay Day Money Dip

1 bag (16 ounces) frozen shelled edamame, thawed (also called mukimame)

1 ½ cups frozen sweet green peas, thawed

1 to 1 1/2 tablespoons finely minced fresh garlic

½ cup finely chopped green onions, green and white parts

1/3 cup finely chopped Italian flat leaf parsley

1/3 cup finely chopped fresh mint leaves

1/3 cup favorite Italian dressing

5 tablespoons lemon juice

2 tablespoons honey

2 tablespoons Mazola corn oil

¼ teaspoon each salt and ground black pepper

 

Combine edamame, peas, garlic, green onion, parsley, mint and Italian dressing in food processor bowl. Process until fairly blended, then add remaining ingredients and process until nearly smooth. Serve with desired dippers: baby carrots, celery, red/yellow/orange bell pepper strips, whole wheat crackers, pita chips or wedges. Makes about 4 cups dip ((12 servings of 1/3-cup each)
