Crispy chicken strips with sweet potato sticks, and toasted cauliflower

For the chicken
4 boneless skinless breasts of chicken
1 1/2 cups of low fat Greek yogurt
1 Tbs. Corriander powder
1/2 tsp. Cracked black pepper
1 tsp. Granulated garlic
3 cups panko bread crumbs

Place yogurt in mixing bowl add the corriander, pepper, and garlic and mix. Cut the chicken into strips and place into yogurt. Roll the yogurt covered strips of chicken through the bread crumbs and place the strips on a oiled cookie sheet make at 350 for about 20 min or until chicken is done.

For sweet potato sticks
2 large sweet potatoes
Sea salt
Olive oil
Smoked paprika

Peel the potatoes and cut into steak fry size wedges. Coat in olive oil and bake at 350 for about 40 min or until done. Just prior to serving dust with salt and a little smoked paprika

Toasted cauliflower

1 head of cauliflower
Olive oil
Salt and pepper
1 tsp cumin powder
1 tsp smoked paprika
1 tsp corriander powder

Cut cauliflower into bite size pieces toss with oil and season with everything else. Place on baking sheet and roast at 350 until cauliflower is tender about 35 min
