Apple Pecan Cinnamon Breakfast Quinoa
1 cup pre-rinsed quinoa
1¾ cups 1% low-fat milk
2 tablespoons brown sugar
1/3 cup chopped pecans
1/3 cup unsweetened applesauce
1 cup chopped apple
1 teaspoon ground cinnamon
Add quinoa and milk to a medium saucepan. Bring to a boil over medium-high heat, stirring occasionally. Reduce heat to low, cover and simmer until nearly all milk has been absorbed, about 15 to 20 minutes. Stir in all remaining ingredients and cook additional 2-3 minutes. Enjoy immediately or refrigerate in tightly covered container. Microwave servings when ready to enjoy.
Makes 3 large, heaping 1-cup servings.
