Quinoa Salad with Roma Tomatoes and Green Onions

  • 9 oz quinoa
  • 1 1/2 pt water
  • 1/4 tsp salt
  • 4 oz Roma tomatoes, small dice
  • 4 oz carrots, small dice
  • 8 fl oz olive oil


  • Rinse the quinoa thoroughly in cold water
  • Combine with the water and salt. Bring to a boil. Lower heat, cover and simmer slowly until the grain is cooked, about 15 minutes.
  • Spread the cooked grain in a shallow pan to cool
  • Combine the cooled quinoa, Roma tomatoes
  • Add the olive oil and toss to mix
  • arrange lettuce leaves on cold serve plates
  • mound the salad mixture on the lettuce leaves
