Salmon Poached in Court Bouillon

  • 1 pint of water
  • 8 fl. oz. of red wine
  • 2 oz salt
  • 1/4 tsp peppercorns, crushed
  • 1 bay leak
  • 1/2 tsp dried thyme
  • 10-12 parsley


  • Combine all ingredients in stockpot or saucepot and bring to a boil
  • Reduce heat and simmer for 30 minutes
  • Strain and cool
  • Garnish with green onions
