Recipes: Cake Pops

Ingredients:

  • 1 box cake mix – any flavor you choose
  • ¼ cup icing – any flavor you choose
  • 1 package of almond bark – vanilla or chocolate
  • Lollipop Sticks
  • Sprinkles

Directions:

Mix and bake cake according to the directions on the box. Remove cake from oven and cool. Once cake is cool, scoop it into a bowl and use a fork to mash the cake until it is all crumbs. Once this is achieved, add the icing and continually mix into the cake until there are no dry crumbs left. Place bowl of cake/icing mix in the fridge for at least 1 hour. While cake mixture is cooling, turn on your chocolatier and begin melting your chocolate.

Once the cake mixture is chilled, remove it from the fridge and scoop about a tablespoon out, roll it in ball and place it on a pan. Repeat this until you have used all of the mixture. It’ll make around 3 dozen balls.

By now your chocolate should be melted. You’ll want to take a lollipop stick, dip it in the melted chocolate and stick it into the ball. Repeat this process until you have sticks in all your cake balls. By doing this it helps the cake ball adhere to the stick and it’s less likely to fall off into the chocolate while you are dipping.

Hold your cake ball upside down by the stick and dip it into your chocolate. Allow the excess chocolate to drizzle off, and if you choose, now is the time to sprinkle your cake pop and place it in your designated drying area. Repeat this process until you have created a full batch of delicious cake pops!
