Crab & Lime Tostada

You will need:

one sleeve of prepared tostadas. You can buy them in almost any supermarket.

1/4 cup Mayo

1/4 cup diced red onion

1 sliced green onion

1 diced serrano pepper

1 diced tomato

1/2 cup Grated Panela Cheese (could substitute shredded mozzarella if you can’t find Panela)

2 T chopped cilantro

Juice of 1 lime

1 teaspoon salt

1/2 LB crab meat

1 cup diced avocado

2 cups shredded iceburg lettuce

Combine Crab, red onion, green onion, serrano pepper, cilantro, lime juice, salt & tomatoes together in a mixing bowl.

spread a thin layer of mayonaisse on the top of the tostada

Layer the shredded iceburg lettuce

Place a pile of the crab salad on the tostada

Top with grated panela Cheese & diced avocado

Garnish with additional Cilantro if you desire

Makes about 6 tostadas

 

Papaya & Mango Salsa

1 cup diced papaya

1 cup diced cucumber

1 cup diced mango

1/8 cup chopped cilantro

1/2-3/4 finely chopped serrano pepper (depends on desired heat level)

1/2 cup diced red onion

1 cup diced tomato

1/8 cup lime juice

2 Tablespoons olive oil

1/2 Tablespoon oregano

Salt & Pepper to taste

Place all of the diced ingredients into a mixing bowl and add salt and pepper to taste. Serve with tortilla chips.
