Island Jerk Shrimp Sauté
10 medium shrimp – peeled, deveined and tail removed
Seasoned flour – enough to dust shrimp for sauté – seasoned with salt and
3 tbsp. olive oil or good quality vegetable oil
2 oz. frozen peas and carrots (thawed)
2 oz. jerk marinade
1 tsp. pureed garlic
1 tbsp. butter
6 oz. of shoe string sweet potato fries
1. Dust shrimp in flour and set aside. Heat oil in sauté pan to hot, add
2. Sauté until lightly golden add garlic, butter and peas and carrots.
Sauté an additional 60 seconds.
3. Add jerk marinade and sauté and additional 45 seconds until coated
thoroughly. Serve over a bed of crispy sweet potato fries.
