50% Less Calories Pumpkin Cookies
1 ¼ cups white whole wheat flour
1 cup all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon cinnamon
1 teaspoon pumpkin pie spice
½ teaspoon salt
1 ¼ cups packed brown sugar
2 tablespoons softened butter
3 tablespoons natural unsweetened applesauce
1 cup pure pumpkin (from 15 ounce can)
1 large egg
1 teaspoon vanilla extract
Preheat oven to 350°F. Spray or grease baking sheets. In a medium bowl, whisk together flours, baking powder, baking soda, cinnamon, pumpkin pie spice and salt. Beat brown sugar, butter and applesauce in electric mixer bowl until well blended. Add pumpkin, egg and vanilla and beat until smooth. Gradulaly beat in flour mixture. Drop by rounded tablespoon onto greased baking sheets.
Bake 13 to 17 minutes, or until edges are firm. Cool on baking sheets just a minute or two, then remove to wire racks to completely cool. Store in tightly covered container.
Makes about 30 to 36 cookies (about 62 calories compared to 125 for regular pumpkin cookie with glaze).
