Roasted chicken with potato and root vegetables

  • One whole roasted chicken
  • 1T fresh Garlic
  • 1T fresh chopped thyme herb
  • 1t fresh chopped rosemary
  • 3T Olive oil
  • Salt and Pepper

Cut chicken in half and coat with olive oil and sprinkle the fresh garlic, salt and pepper along with the fresh herbs until chicken is seasoned.

Place chicken in oven at 375* for about 60 minutes or until it reaches internal temperature of 165*F

Next you’ll need:

  • Potato and vegetables
  • 10 whole red small potatoes
  • 5 Each Carrot whole
  • 5 Each parsnip
  • 3 whole Spanish onion
  • Salt and pepper

Wash all vegetables and leave potatoes whole, cut carrot, parsnip and onion to about 1 to 1.5 inch thick and season.

Place on bottom of chicken and bake along with time estimated above.
