RECIPES: Green eggs & ham sandwich

  • 2 slices favorite, hearty whole grain bread (toasted if desired)
  • Mustard or mayo
  • 4 or 5 slices ripe avocado
  • 1 slice ham (about 3 ounces)
  • 1 cooked egg (any style cooked)
  • Baby kale


  1. Spread bread with mayo or mustard.
  2. Top with avocado slices, ham and egg.
  3. Add a few leaves baby Kale for additional greens! Makes 1 sandwich.
