Kale & Artichoke Dip


  • 1 oz. Clarified butter
  • 1 tbsp. Minced garlic
  • 1 cup Spanish onion
  • 1 tbsp. Kosher salt
  • ½ tsp. Black pepper
  • 1.5 qts. Heavy cream
  • 12 oz. Cream cheese
  • 3 oz. Kale
  • 12 oz. Artichokes
  • 12 oz. Shredded white American cheese
  • ½ oz. Shredded mozzarella cheese
  • Tortilla chips


Preheat large saucepot to medium heat. Add butter, swirl, add garlic, onions, salt & pepper, cook for 3 minutes, do not brown. Add cream, bring to simmer, then add cream cheese. Stir, bring back to simmer. Add kale, artichokes and American cheese, continue to simmer for 15 minutes stirring regularly until mixture comes together like creamed spinach.  Preheat oven to 350°. Spray a square pan with cooking spray and place Kale Artichoke Base into pan. Spread mozzarella cheese evenly over Kale Artichoke Base. Bake for 10 minutes. Serve with tortilla chips.
