Coconut Curry Butter

  • 1 stick (1/2 cup) unsalted butter, softened
  • 1 ½ to 2 teaspoons curry powder
  • ¼ teaspoon salt
  • 1 teaspoon lime juice
  • 1/3 cup finely shredded unsweetened coconut
  • 3 tablespoons finely chopped cilantro
  • ½ – 1 cup finely shredded unsweetened coconut, toasted

Combine butter, curry powder, salt, lime juice, coconut (not toasted) and cilantro. Stir until thoroughly blended. Makes 6-8 servings.
