Smoky Lime Mayonnaise with Cotija Cheese

  • 1 cup light reduced-fat mayonnaise
  • 1 large, very finely minced garlic clove
  • 3/4 – 1 teaspoon ground hot Mexican chili pepper
  • ½ – ¾ teaspoon ground chipotle chili pepper
  • ½ teaspoon ground ancho chili pepper
  • 1 teaspoon sugar
  • 2 teaspoons finely grated lime zest (from 1 large lime roughly)
  • 1 teaspoon lime juice
  • ½ teaspoon salt
  • 2 cups crumbled Cotija cheese
  • Chopped cilantro and lime wedges, optional for additional garnish and flavor

Stir mayonnaise, chili powders, sugar, lime zest, lime juice and salt together in medium bowl until thoroughly blended. Place crumbled cheese on flat plate for rolling corn on the cob in after spreading with spiced mayo. Sprinkle with chopped cilantro and a squeeze of lime if desired. Makes 6-8 servings.
