RECIPE: Green Eggs and Ham Breakfast Sandwich

Green Eggs and Ham Breakfast Sandwich

4 large eggs

3 cups packed baby spinach/kale mixed greens

2 whole-wheat English muffins, toasted

2 slices (1-ounce each) favorite cheese

2 slices (2-3 ounces each) lean ham or Canadian bacon, heated in microwave or skillet

 

Blend eggs and spinach/kale leaves in blender until thoroughly processed and combined.  Lightly spray/grease two small microwavable flat-bottom bowls. Divide egg mixture between two bowls and microwave 1 ½ minutes on high. May need to be microwaved additional 5 to 20 seconds depending on your microwave. Flip onto toasted English muffin half, top with cheese and warmed ham slice and top of muffin. Enjoy. Makes 2 sandwiches.
