Quinoa Breakfast Bowl with Apples & Cinnamon
1 cup quinoa, uncooked
1 ½ cups low-fat milk
1 teaspoon vanilla extract
1 ½ teaspoons ground Saigon cinnamon
3 tablespoons peanut butter
1 large red or green apple, skin-on, chopped
1/3 cup coarsely chopped peanuts
Combine quinoa, milk, vanilla and cinnamon in a large saucepan and bring to a boil. Reduce heat, cover and simmer for 15 minutes or until quinoa has absorbed all liquid. Fluff with a fork. Stir in peanut butter and apple. Divide between 2 to 4 bowls and sprinkle with peanuts and more cinnamon if desired.
Makes 2 to 4 servings, depending on your appetite.
