RECIPES: The Billion Dinners Challenge

Meal 1: Pancakes (breakfast for dinner!)

  • “In a pinch” version: (get a pancake mix box and copy instructions)
  • Mix a boxed mix with water and eggs, per the instructions on the box.
  • Follow the instructions on the box!
  • Make it fancy!
  • Top with sprinkles and whipped cream for a sweeter treat!
  • Add chocolate chips to the mix before cooking and top with chocolate drizzle for more of a dessert vibe
  • Add blueberries to the mix before cooking and top with syrup for a fruity take
  • Top with whipped cream, strawberries, and blueberries for a lighter dish
  • Add ½ C canned pumpkin, 1 tsp ground cinnamon, and ½ tsp ground allspice to create pumpkin pie pancakes to celebrate the arrival of fall!


Meal 2: Pasta

  • “In a pinch” Version:
    • Boil water on the stove.
    • Add your favorite type of pasta (shells, spaghetti, macaroni, bow tie, etc) to the boiling water.
    • Cook 10-12 minutes, depending on preference.
    • Strain while running under cold water to stop the cooking.
    • Pour into separate bowls, topping with butter, shredded Parmesan cheese, and salt to taste.
  • Make it fancy!
    • Brown ground beef with garlic, onions, spinach, and mushrooms. Drain the fat off, and add your favorite canned pasta sauce to the meat mixture. Spoon on top of plain pasta as desired.
    • Make your own gluten and grain free noodles out of zucchini!
    • Add shrimp or chicken to the basic pasta above for a protein punch.
