1 pound ground hot pork sausage
3 cups all-purpose baking mix (such as Bisquick)
2 cups shredded sharp cheddar and Muenster cheese (from blocks of cheese)
Green olives with red pimiento center (approximately one 7 oz. jar)
Black olives, optional
Heat oven to 400°F. In a large bowl, combine baking mix, sausage and shredded cheese until blended. Shape into 1 ¼-inch balls and place on lightly greased baking sheets. Press one olive (either green or black) deeply in center of each ball. Bake 15 to 18 minutes or until lightly browned.
Makes about 48 eyeballs.
