  • 1 Cup Rice Flour
  • 3/4 Cup Corn Meal
  • 3 Tbs Sugar
  • 2 1/2 Tsp Baking Powder
  • 3/4 Tsp Salt
  • 2 Eggs
  • 1 Cup Rice Milk
  • 1/4 Cup Butter, Melted + 1 Tbs Butter


Preheat oven to 400 degrees. Mix dry ingredients. Melt 1 tablespoon butter in cast iron skillet or oven safe skillet. Combine eggs, rice milk, 1/4 cup melted butter; add to flour mixture. Mix well. Pour batter into the hot skillet. Bake 15 – 20 minutes.
