Grilled Beef Steak with Ancho Chocolate Citrus Rub

2 beef steaks (sirloin tip center, sirloin, New York Strip, Porterhouse, T-Bone, rib)*

Salt and pepper (if desired at end of cooking)

Ancho Chocolate Citrus Rub

1 tablespoon ground ancho chili powder

3 cloves garlic, finely minced

1 ½ teaspoons dried oregano leaves

1 teaspoon unsweetened cocoa powder

1 teaspoon freshly grated orange peel/zest

½ teaspoon ground cinnamon


Combine rub ingredients. Press evenly onto beef steaks. Place steaks on greased grill grates over medium heat. Cook 12-15 minutes or until 145°F for medium-rare doneness, turning once.  Season with salt and pepper if desired. Makes 2 servings.

*This amount of rub covers 2 steaks that are about 8 ounces each. Make more rub for very large steaks. Kim used slightly more cocoa and slightly more cinnamon.
