Smoky Carrot Hummus Spread/Dip

1 can (15 ounces) Libby’s Sliced Carrots, rinsed and drained

1 can (15 ounces) Libby’s Garbanzo Beans, rinsed and drained

2 tablespoons lemon juice

1 garlic clove, coarsely chopped

1 teaspoon smoked paprika

½ to 1 teaspoon ground cumin

¼ teaspoon ground black pepper

¼ cup extra virgin olive oil


In a food processor bowl, blend together carrots, garbanzo beans, lemon juice, garlic, paprika cumin and pepper. While processor is running, slowly pour in olive oil. Process until smooth. Spread on sandwich or enjoy as a dip. Makes about 2 cups.
