RECIPES: Crispy Seared Indiana Perch w/ Tomatoes Two-Ways

Serves 4

16 fillets of Bell Aqua Culture Perch

All purpose flour

salt and pepper

vegetable oil

Season the flour with salt and pepper dredge the fish through the seasoned flour and sear in a heavy pan that is lightly coated with oil. cook for about 3-4 minutes on each side


For the tomato 2-way

2 cups of polenta corn meal

1 Tbs. oregano

1 cup flour

2 beaten eggs mixed with a cup of whole milk salt and pepper

2 large green tomatoes

Mix the corn meal and with salt, pepeper and the oregano. slice the tomatoes about 1/2 inch thick and dredge throught the flour, than the milk and lastly crust with the corn meal. pan fry to a golden brown place two tomato slices on the plate with the fish and garnish with the tomato relish


Tomato Relish

2 large ripe toamtoes (optional GRILL THE TOMATOES FIRST)

3 leafs of fresh basil

small bunch of chopped cilantro

1 Tbs. red wine vinegar

2 Tbs. olive oil

corn cut from 2 ears of Indiana sweet corn salt and pepper

Finely dice the tomatoes like you would for salsa, season with salt and pepeper add the torn basil and cilantro, toss in the corn and mix and palceon top of the fish and tomatoes
