Kale Smoothie


  • 1 large ripe banana
  • 4-5 kale leafs stems removed
  • ½ cup blue berries
  • ¼ cup dried acai berries or 2 Tbs. dried acai powder
  • ½ cup pomegranate berries
  • 3 Tbs. raw honey
  • 1 cup water
  • 3-4 ice cubes


  • Rehydrate the acai berries in hot water for about an hour, use microwave to speed up process. Place the kale and banana in blender and puree smooth, add everything else and puree smooth. Serves 1-2

Kale Salad

  • 4-5 leafs of kale torn stems removed
  • 3-4 leafs of romaine
  • 1 granny smith or Fuji apple julienne cut
  • 6-7 grape tomatoes cut in half
  • 8-10 pieces of walnuts chopped
  • crumbles of stilton blue cheese
  • sherry vinegar
  • olive oil
  • seas salt and cracked black pepper


  • Add the greens, apples, tomatoes, and toss lightly dress with three parts olive oil and one part sherry vinegar. Place salad on plates and garnish with walnuts and stilton blue cheese chunks
