Red White & Blue Salsa

  • 3 ½ cups diced fresh strawberries
  • 3 cups diced jicama
  • 3 cups fresh blueberries
  • 1 cup finely diced red bell pepper
  • ¾ cup very finely diced red onion
  • 2 jalapeno peppers, seeded and finely minced
  • 2-3 teaspoons finely minced garlic
  • 2/3 cup finely chopped cilantro
  • Zest from one large lime
  • ½ cup freshly squeezed lime juice
  • 1 ½ tablespoons extra virgin olive oil
  • ½ teaspoon salt

Lightly toss strawberries, jicama, blueberries, red bell peppers, red onion, jalapeno peppers, garlic and cilantro together in a large bowl.  Whisk lime juice, zest, oil and salt together in a small bowl; pour over salsa and toss very lightly. Serve immediately or refrigerate in tightly covered container. Makes about 11 ½ cups salsa.
