Recipe: Beef Tartare

4 oz. finely minced filet mignon- it should look ground
1 egg yolk – fresh farm egg
1/4 tsp mustard, local folks mustard
1/2 tsp Spanish onions, finely chopped
1 Tbsp. capers, drained and rinsed
3 drops of Tabasco sauce
1 tsp Worcestershire sauce
1/2 tsp olive oil
1/2 tsp flat leaf parley, minced
ground white pepper, fleur d sel


Place the finely minced beef in a stainless steel bowl, add mustard, Spanish onions, capers, Tabasco sauce, Worcestershire, olive oil, flat leaf parsley, cracked black pepper, fleur d sel. Mix together and serve in a ring mold. Top with farm fresh egg yolk, 6 crustinis
