Harvest Apple, Dried Fruit & Nut Dressing

  • 2 tablespoons unsalted butter
  • 1½ tablespoon finely minced garlic
  • 1 cup finely diced celery
  • 1 cup finely chopped onion
  • 1¾ cups diced Granny Smith apple (or other favorite crisp apple, typically 1 large apple)
  • 2/3 cup coarsely chopped dried apricots*
  • 2/3 cup dried tart cherries*
  • ¾ cup natural sliced almonds*
  • 1 package (14 – 16 oz.) favorite herb seasoned stuffing mix
  • ½ teaspoon poultry seasoning
  • ¼ teaspoon ground black pepper
  • 2 to 3½ cups fat free, lower sodium chicken broth (or vegetable broth)

Heat oven to 350°F. Coat a 9×13-inch glass or ceramic baking dish with vegetable cooking spray and set aside. In a large skillet over medium high heat, melt butter. Add garlic, celery and onion and sauté 5 minutes or until slightly tender. Stir in apple, apricots, cherries and almonds and cook several more minutes until apple is just starting to soften. Combine stuffing mix, 2 cups chicken broth, poultry seasoning and pepper in a large bowl. Add sautéed vegetable/fruit/nut mixture to stuffing mix, tossing lightly to combine. Add additional chicken broth for a moister stuffing. Transfer stuffing to baking dish and bake about 30 to 35 minutes, or until completely hot throughout.

Makes 12 servings

*Use any favorite nuts and dried fruits.
