RECIPES: Tomato Salsa

4.75 fresh roma tomatoes diced

4 oz diced green pepper

2 cup diced onion

2 cup cleaned and chopped cilantro

Fresh lime juice (4 tablespoons)

Diced jalapeno peppers (including seeds)

Cumin (1 teaspoon)

Kosher salt (1 teaspoon)

Ground black pepper (1 teaspoon)

Tomatoes canned. Drain and save juice (3 cups diced)

Use 4 cups of tomato juice (use reserved from drained tomatoes and then add tomato juice to make up what you need)


Add all ingredients together and mix

Salsa may be thinned with reserved juice from tomatoes.

Hold cold for service.
