White Bean Dip

1 ½ cups cooked Great Northern beans (1 (15 oz.) can), rinsed and drained

¾ cup Daisy Brand Cottage Cheese

2 teaspoons chopped fresh rosemary

1 teaspoon grated lemon zest

1 tablespoon lemon juice

1 garlic clove, chopped

¼ teaspoon black pepper

1/3 cup finely chopped red bell pepper

4 cups assorted fresh vegetables

 

In a food processor, pulse the beans, cottage cheese, rosemary, lemon zest, lemon juice, garlic and black pepper until nearly smooth. Transfer the dip to a medium bowl and stir in the red peppers. Serve dip with vegetables or whole wheat pita wedges. 76 calories per serving.
